Since I like attempting to make new things in the kitchen that you can usually buy in the store for a lot less work, I thought it would be a good idea this Christmas to make my own marshmallows. Peppermint flavoured, of course, for this time of year. Sometimes, trying something new results in failure that convinces me to just buy that particular item from now on. Marsmallows, though, are not one of those things.
They are actually quite easy to make, provided you have a stand mixer ( I’m sure it would be possible to do with a hand held mixer, but your hand would get really tired and maybe overheated from the steam) and a candy thermometer ( this you really do need). I used a recipe for these Peppermint Marshmallows (click the link) from a blog I read, and I was pretty happy with them (although I didn’t use the cornstarch, just the icing sugar, to dust them). They are indeed marshmallowy and pepperminty. Although I will probably still buy marshmallows, it is nice to know I can make flavoured ones for special occasions. Even though I am terrible at swirling food colouring through things to make it look pretty.
