Funfetti Cupcakes

When there are so many fun, interesting and delicious looking (and complicated!) cupcake recipes out there, you sometime forget about the simpler ones.  You know, the ones that it takes about an hour total to make, bake and frost.  No scooping, filling or brushing required.  So when I discovered that one of the girls in my Awana class had a birthday right on Halloween, I asked her what kind of cake was her favourite.  White cake with sprinkles in it was her answer.

So I went in search of a funfetti cupcake recipe (yes box mixes are easier, I just like to make my own) and found one on Annie’s Eats, the blog I most often frequent for cupcake related recipes.  It’s really good white cupcake with sprinkles mixed in, and the whipped vanilla buttercream is my new favourite non-cooked frosting.  That little bit of whipping cream does wonders to lighten it up.
