Operation Shower Cake

We’re having a triple wedding shower at church tomorrow night.  Yes, triple.  The three brides are all not extremely well known by most of the congregation, so to make it a little easier on the brides, we decided to do a joint shower.  That way no one bride is the centre of attention with several dozen people that she doesn’t know very well.  My mom and I are in charge of the evening’s activities so I volunteered to bake a cake.  Not just any cake, though.  A two tier cake.  It seemed like a good idea at the time, but now I am crossing my fingers that it will turn out like it looks in my head.

The layers are all baked and wrapped in plastic wrap in the freezer.  Last night I took them out to level and square them.  I had baked the vanilla layer in eight inch squares and after stacking them, decided I liked six inch better, so I had to cut them down.  This of course means that I have a ziploc bag of cake cuttings.  Yum.  The top tier will be a vanilla bean with lemon curd filling, and the bottom is a chocolate cake with a raspberry curd fillings.  I was hoping the curds would both be a bit thicker once they cooled (the raspberry is slowly running off the spoon in that picture), but I think it should still work.  Next project:  the frosting!

About Kathy

I'm a twenty-something who loves animals, farming, photography and cooking/baking. Luckily enough, photography works really well with the other three subjects, so I carry my camera around practically everywhere. Other than that, my life is pretty uneventful.

Yep, I was going to post the links to all the recipes I used when I posted pictures. Which will be as soon as I stop being lazy and get off the couch to get my camera cord 🙂
