Grapefruit is what I consider a winter fruit. Up here, in winter, the fruit that does not cost five or six dollars a pound is fruit like citrus, apples, bananas, etc. It’s all good stuff, and I like it, but I am looking forward to summer fruit, too. Hurray for peaches and nectarines and strawberries and such.
Anyway, I am getting off on a rabbit trail. I found this recipe for grapefruit sandwich cookies a while ago, but needed some sort of specialish occasion to create them. Our AWANA windup on Sunday proved the perfect time. After a little snafu involving a bad grapefruit, they were pretty simple to make. I would have liked a little more grapefruit flavor in the icing, but I’ll chalk that up to the loss of a grapefruit and just add a little more juice next time. All in all, they are small, easy to eat and in a fun colour and they are tasty. All good for children and adults alike.
