Yep, it’s that time of year again! Pi Day! To celebrate everyone’s favourite gigantic number and the shape it represents, bakers and food bloggers everywhere make pie. Chocolate pie, fruit pie, covered pie, lattice pie, you name it, it’s popping up everywhere. For my pi pie, I chose to make key lime pie. Key limes were on sale last week, and that’s when I decided.
This is the easiest pie I have ever encountered. I made a graham cracker/coconut crust, and mixed together the four ingredient filling and baked it for 15 minutes. Presto, key lime pie. I don’t actually have pie pans, because I don’t make it all that often (pie crust hates me), so I baked it in a cake pan. It works pretty well except it is really hard to get the first piece out without wrecking it.
