‘Healthy’ Cookies

It has now been a couple of weeks since Christmas, and perhaps there is still some Christmas leftovers kicking around.  For example, I still have candy cane ice cream in my freezer, and fudge in my fridge.  However, all of the Christmas-y type baking, while delicious, starts making one feel a bit unhealthy.  That’s probably why so many people make dieting their New Year’s resolution.

These cookies are about as healthy as cookies can be.  They don’t have any oil/butter, other than peanut butter, no white sugar, no flour.  They are practically health food, as far as cookies are concerned.  And these peanut butter oatmeal cookies are super duper easy.  It takes a grand total of about fifteen minutes to mix and bake and then eat.  Plus since they are healthy, you feel less guilty about eating multiple ones.
