Lemon meringue…

Cupcakes!  The husband of the couple that teach the Bible Study I attend, will occasionally become obsessed with certain food items.  Several weeks ago, it was a particular egg salad sandwich he had eaten at church (we had a potluck soup and sandwich lunch at church) as well as a coconut cream pie from a different potluck several YEARS ago.  His wife says he could not stop talking about these things.  Now, since I am in charge of the snack, I have some control over what to bring, so to do his wife and him a favour, my mom made a coconut cream pie one week and he is positive that it is the same as the one he had at church.  Except it’s not, since Mom has never brought a coconut cream pie to church, except once, last October, for Thanksgiving.

Lately, apparently, he has been talking about lemon meringue pie.  Since I am always looking for ideas for snack, I thought this one had potential.  One problem.  I am not good at making pie crust.  It turns out weird, and even though I follow the recipe, it is still not as it should be.  But I am competent at cupcakes.  And so I did a little searching and found this recipe for lemon meringue cupcakes.  The frosting turned out more like a marshmallow frosting, than a meringue, but everyone said they were good, so it must be ok.
